This recipe uses Jack Berry™ Emmer Flour 1850 from the Baker’s Choice range. This flour is a brilliant versatile ancient grain flour that is high in natural fibre and protein. These brownies are easy to make and they look great, they are moist in texture and taste delicious.
1 ¼ cup Emmer Flour
1 cup butter
1 ¼ cup caster sugar
1 cup light brown sugar
1 cup cocoa
4 large eggs
Pinch of salt
1 cup milk chocolate chips for topping (optional)
Preheat oven to 180°C/350°F/Gas Mark 4. Line a 9-inch square baking dish with parchment paper or lightly grease with oil.
In a medium size bowl mix butter, sugars, cocoa, eggs and salt until the ingredients are all combined.
Add the sieved flour to the wet ingredients and mix well. Then let the mixture sit for 10 minutes in order to allow the flour to absorb the moisture.
Mix the ingredients again for 2 minutes and then pour the mixture into the baking dish and smooth the top and then sprinkle chocolate chips on top (optional).
Bake in the centre of the oven for approximately 30 – 40 minutes. The brownies are cooked when the mixture starts to separate from the sides of the dish, the edges become crispy and the centre of the mixture is slightly soft.
Remove from the oven and let the brownies sit for 15 minutes to cool and then removed from the dish and allow to cool down fully before cutting.
