Oat flour is packed with antioxidants, it also has more protein and fat than most traditional flours. It is one of the most nutritious wholegrains. Oats were the last of the major cereal grains to be domesticated, around 3,000 years ago in Europe, and may have started as a weed that grew within cultivated fields of various other crops. The Romans used the crop as horse food and even today, less than 5% of the oats now grown commercially are for human consumption.
Oats are extremely high in both soluble and insoluble fibre, containing about 12 grams of fibre per cup. Studies have shown that a high-fibre diet can reduce the risk of coronary heart disease. One study on oats specifically found that consuming them helped lower LDL (bad) cholesterol.
Oat flour is very versatile and full of flavour, it provides the perfect texture and holds recipes together well. It can be used to make oatcakes, oatmeal cookies, muffins and oat bread.
