In its original form, spelt has a light reddish-brown colour and a nutty flavour. It has a light and airy texture, similar to wheat and it is increasing in popularity due to its high mineral and vitamin content.
It is more water-soluble than wheat, which makes it easier for the body to digest. It can therefore play a part in increasing circulation, improving the immune system, lowering blood sugar, and reduce bad cholesterol levels. Spelt flour can be used to make a variety of breads, cakes and tarts.
